Asian Shrimp Stir-Fry

Ingredients

  • 2 tbsp olive oil
  • 2 cups carrots (sliced into 1/2-inch rounds)
  • 3 cups onion (sliced into 1/2 inch pieces)
  • 3 cups red bell pepper (sliced into 1/2 inch pieces)
  • 3 cups green bell pepper (sliced into 1/2 inch pieces)
  • 2 lbs large shrimp (shelled, peeled and deveined)
  • 4 cups cabbage (chopped into 1 inch pieces)
  • 1 cup teriyaki marinade/sauce
  • 2 Tbsp honey

Directions

1. Preheat skillet to 350 degrees.

2. Heat olive oil in skillet, then add carrots, onion and both colored peppers.

3. Cook for approximately 10 minutes with lid on skillet, or until carrots begin to soften slightly.

4. Add shrimp, cabbage, teriyaki sauce, and honey.  Replace lid.

5. Cook an additional 10 minutes, or until shrimp are opaque.

6. Serve and enjoy!

Servings: 8
Yield: 8 - 1 1/2 - 2 Cup Servings
