Cajun Roasted Okra

Ingredients

  • 1 pound okra, tops removed and sliced in half lengthwise
  • 2 Tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon black pepper
  • Sea salt to taste
  • Cajun Dipping Sauce

Directions

  1. Preheat oven to 450°F.
  2. Line a 15X9X1-inch baking pan with aluminum foil and spray with nonstick cooking spray.
  3. Place okra, olive oil, Cajun seasoning, pepper and salt in prepared pan; stir until well coated.
  4. Bake 35 to 40 minutes or until okra is crisp.

Serves: 4-6
