Caramel Popcorn

Ingredients

  • 1 cup brown sugar
  • 6 tablespoons butter
  • 1/3 cup light corn syrup
  • 1 teaspoon molasses
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 12 cups popped popcorn

Directions

  1. In a small saucepan over medium-high heat, combine the brown sugar, butter, corn syrup, molasses and salt. Bring the mixture to a boil and cook an additional 1 to 2 minutes to reach 250°F on a candt thermometer. Stir in vanilla extract and baking soda.
  2. While caramel is cooking, pop popcorn. Place popcorn in a large bowl.
  3. Pour caramel over popcorn and stir until evenly coated.

Serves: 5-6

Test Kitchen Tip:  If using popcorn maker with tumbler, add 10 cups of popcorn to tumbling bowl and pour caramel mixture into the center of the bowl. Place bowl on tumbler and tumble about 5 minutes or until evenly coated. If necessary, stir with a wooden spoon to fully incorporate caramel throughout popcorn.
