Parmesan Crusted Tilapia

Ingredients

  • 2 ounces Parmesan cheese
  • 1/4 cup Italian seasoned Panko bread crumbs
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon mayonnaise
  • 2 tilapia fillets or other white fish fillets (about 4 ounces each)

Directions

  1. Heat oven to 425°F. Spray baking pan with nonstick cooking spray.
  2. Using a spiralizer, grate Parmesan cheese and place in a large resealable plastic bag. Add Panko bread crumbs, Italian seasoning and black pepper. Seal and shake bag.
  3. Spread mayonnaise on both sides of fish fillets. Add fish to bag and shake until coated with crumb mixture. 
  4. Press remaining crumbs from bag onto fish. Place on prepared baking pan.
  5. Bake until fish flakes easily with a fork, 12 to 14 minutes.
