Slow Cooker Coffee Braised Short Ribs

Ingredients

  • 1 cup strong brewed coffee, cooled
  • ¼ cup apple cider vinegar
  • ¼ cup packed light brown sugar
  • 1 medium onion, chopped
  • 4 garlic cloves, minced
  • 2 jalapeño peppers, minced
  • 2 bay leaves
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • ½ teaspoon dried thyme
  • 5 pounds bone-in beef short ribs, cut into 3-inch pieces
  • Cooked polenta
  • Thyme leaves

Directions

  1. In a glass 13x9-inch baking dish, combine coffee, vinegar, brown sugar, onion, garlic, jalapeño, bay leaves, paprika, salt, pepper, cayenne pepper and thyme. Add short ribs, turn to coat with marinade.
  2. Cover with plastic wrap and refrigerate to marinate several hours or overnight.
  3. Place short rib mixture in slow cooker crock.
  4. Cover and cook on HIGH for 5 ½ to 6 hours or LOW for 11 to 12 hours.
  5. Let mixture cool and remove layer of fat.
  6. Reheat short ribs before serving.
  7. Serve over polenta and garnish with fresh thyme.
