Slow Cooker Roasted Red Pepper Marinara Sauce

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 can (28 oz.) diced tomatoes
  • 1 can (6 oz.) tomato paste
  • 1/2 cup chopped roasted red peppers
  • 2 teaspoons sugar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

  1. In cast iron crock over medium, heat olive oil. Add onions and garlic. Cook until onions are tender, about 4 minutes.
  2. Add diced tomatoes, tomato paste, red peppers, sugar, Italian seasoning, salt and pepper.
  3. Cover and cook on HIGH for 3 hours or MEDIUM for 6 hours.
  4. If desired, transfer crock to tealight stand.

Serves: 6-8
