Slow Cooker Succotash

Ingredients

  • 2 tablespoons butter
  • 1 small onion, chopped
  • 1 celery rib, chopped
  • 1 package (1 lb.) frozen lima beans
  • 1 package (8 oz.) frozen corn
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

  1. Melt butter over medium heat in cast iron crock. Add onion and celery to crock, cooking for 4 minutes until onions are tender.
  2. Stir lima beans, corn, salt and pepper into onion mixture.
  3. Cover and cook on HIGH for 2 hours or MEDIUM for 4 hours.

Serves: 8-10
