Slow Cooker White Bean Dip

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 3 cans (15.5 oz. each) cannellini beans, drained
  • 1/2 cup fresh cilantro
  • 1/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarse black pepper

Directions

  1. In a cast iron crock over medium, heat olive oil. Add onions and garlic. Cook until onions are tender, about 4 minutes.
  2. Using S-blade and with processor running, add the onion mixture, beans, cilantro, broth, juice, salt and pepper into the food chute. Process until well blended.
  3. Add bean mixture to crock.
  4. Cover and cook on MEDIUM for 2 to 3 hours.

Serves: 12-14
